This is very quick and easy lunch recipe. I like to pair it with a kale salad topped with my favorite vegan spinach pesto. |
Ingredients:
2 Slices of Whole Grain Bread
2 TBLS of Hummus
2 Tomato Slices
1/2 Avocado sliced
4 thin slices of Cucumbers
Balsamic Vinegar for drizzling
Prepare:
Toast Bread
Top Toast with Hummus, Tomato, Avocado, and Cucumber
Drizzle with Balsamic Vinegar
