Spice up your Night


This recipe is super simple. I would say this is one of my favorite comfort foods in the season of fall.

                                    


Tuscan White Beans with Fire Roasted Tomatoes

 1 Cup Chopped Spinach
 2 Cloves Garlic 
1 Tablespoon Sun dried Tomatoes 
1/4 teaspoon Salt
3 Tablespoon Olive Oil
1 Teaspoon Dried or Fresh Basil
1 Cup Fire Roasted Tomatoes
1 Can White Navy Beans
2 Tablespoon Nutritional Yeast ( Not vegan option use mozzarella)

Pre-Heat oven 350F. Start by placing spinach, garlic, sun dried tomatoes, salt, and olive oil in food processor. Mix until well blended. Place beans, fire roasted tomatoes, and spinach in a baking dish. Sprinkle nutritional yeast on top and place in oven. Cook for 20mins. Let cool for 5 minutes and Enjoy!
